VERON® GMS+ BY AB ENZYMES
VERON® GMS+ is the most recent addition to the well-known VERON® baking enzymes range. Monoglycerides are widely used emulsifiers in the baking ingredients industry. Previously available enzyme solutions were a long way off from achieving an identical texture profile to that of monoglycerides. AB Enzymes explains that VERON® GMS+ was specifically designed to achieve exactly the same crumb texture profile and crumb structure in yeast raised baked goods using a patent-pending amylolytic enzyme acting synergistically in combination with a lipolytic enzyme. Moreover, the company underlines that VERON® GMS+ works regardless of the type of monoglyceride previously used in the bread improver formulation such as powdered mono- and diglycerides or distilled monoglycerides. Cost-in-use of VERON® GMS+ is substantially lower compared with monoglycerides. Ralf Neumann, Customer Solutions Director at AB Enzymes reported: “During our pre-marketing tests we received very positive feedback from our field test partners who were very excited about the performance of VERON® GMS+ […] While the initial development of VERON® GMS+ was only aimed at full monoglyceride replacement of standard monoglyceride dosages of up to 0.5 percent, its unique performance has allowed us to use it for the partial replacement of even higher monoglyceride dosages and in addition partially replace standard dosages of SSL/CSL as a valuable side benefit”.

TO DEVELOP METHOD FOR DETECTING ARSENIC IN APPLE JUICE
Thermo Fisher Scientific Inc. has announced that its Dionex ICS-5000 reagent-free ion chromatography system can be coupled with the Thermo Scientific XSERIES 2 ICP-Q-MS to create a proven IC-ICP-MS method for detecting trace elements, including levels of organic and inorganic arsenic in apple juice. Thermo Fisher’s highly sensitive and selective equipment can distinguish between both inorganic and organic types of arsenic. The distinction is important, as inorganic forms of arsenic are highly toxic whereas organic forms are not. Arsenic is a naturally occurring element that is sometimes found in drinking water and fruit juices, entering during agricultural and industrial processes. Because typical levels of total arsenic found in apple juice are lower than the U.S. Environmental Protection Agency (EPA) drinking water maximum contaminant level, apple juice is generally considered safe and is currently not regulated. John W. Plohetski, vice president and general manager, ion chromatography/sample preparation business unit at Thermo Fisher refers: “Thermo Fisher has developed a highly sensitive and specific method for analysing arsenic levels in apple juice […] The ability to distinguish between organic and inorganic forms of arsenic is critical, and our equipment is sensitive enough to capture that data accurately and reliably”.

STABILIZING OIL-IN-WATER EMULSIONS
WACKER is unveiling a novel solution for stabilizing oil-in-water emulsions with the help of alpha-cyclodextrin. The company explains that the ring-shaped molecules, bioengineered from starch, are ideally suited as emulsifiers for foods containing a mixed oil-and-water phase. In addition, alpha-cyclodextrin adds texture, allowing, “mouth feel” to be adjusted as required. Moreover Wacker adds that since emulsions produced with alpha-cyclodextrin remain stable even at high temperatures, this product is ideal as an emulsifier in salad dressings, mayonnaises, dessert creams and margarine, for example. A particular advantage is that purely vegetarian-grade cyclodextrins are cholesterol-free, non-allergenic and manufactured from renewable raw materials. Furthermore, alpha-cyclodextrin is ideal as a soluble fibre and has a demonstrably beneficial effect on blood cholesterol and the glycaemic index, as the company refers. Nutritionists recommend consuming about 25 to 30 grams of fibre daily; most people in advanced Western economies eat much less. Adding dietary fibre to food, though, often has disadvantages, given the fibre’s poor solubility and the risk of food discoloration.

FULLY SOLVENT-FREE PROCESS PRODUCING STANDARD CANOLA OIL AND NEW CANOLA ISOLATED PROTEINS
At one time, all oil seeds were processed only through natural processes: without the use of solvents. Now, solvents such as hexane are used almost universally in processing soy and other oilseeds. With the advent of broad-based marketing of Natural, Non-GMO and Organic certified products, it becomes even more crucial to consider the implications of processing technologies. The elimination of solvents has been a dream of processors for years, but most have been handcuffed by use of existing facilities and technologies. Aqueous extraction, which uses a water-based solution to dissolve or wash out material from the seed, has long promised a solution. BioExx has worked towards the highest sustainability and minimum environmental impacts during production of oil and protein from oilseed. The company’s most recent advance has been the implementation of a fully solvent-free process producing standard canola oil and new canola isolated proteins for food and feed applications. The primary product is an isolated protein (~84 percent protein) high in well-balanced protein, appropriate for addition to food systems including nutritional applications, bakery and meat products. BioExx’s integrated plant is now able to process raw whole canola seed through true cold pressing and enzyme-assisted aqueous extraction, to produce food-grade proteins and oil without the use of any organic solvents, marking a major step forward in the oilseed-processing field.

NUTRILAC: EGG REPLACEMENT PRODUCT BY ARLA FOOD INGREDIENTS
The Welfare of Laying Hens Directive has come into force across the EU starting from 1st January 2012. It prevents hens being kept in cages with less than 45cm of headroom and 750cm2 of floor space. It also obliges egg producers to provide perches and litter to allow the hens to nest, peck and scratch. However, as many as 13 countries across the European Union, including Spain, Italy and Poland, have admitted that their egg industries will not be ready to meet the new requirements in time for the New Year, sparking fears of availability problems and higher prices. The looming crisis has prompted Arla Foods Ingredients to urge bakery manufacturers to consider using egg replacement products – such as NUTRILAC – to protect themselves from growing uncertainty in the market. John Gelley, Sales Director for EU Bakery at Arla Foods Ingredients, said: “No-one knows for sure what impact the Directive will have. But with so many member states admitting that they are unprepared for the changes, there are worrying signs that bakers could face difficulties sourcing sufficient eggs for their needs or, at the very least, significantly higher prices […] Egg replacement ingredients, such as our own NUTRILAC range, offer the perfect solution to avoiding this uncertainty. They perform just like eggs in a host of bakery applications, and enable companies to maintain product quality and all-important clean label status”.

“MEAT EXTENDER”: TEXTURED PEA PROTEIN
Textured vegetable protein is obtained through extrusion. This enables the structure of the proteins to be changed through mechanical and thermal stress to a sheet structure with a more or less fibrous aspect. ROQUETTE refers that up to now mainly limited to the proteins obtained from wheat and soybean, the textured vegetable proteins offer is being expanded: with the development of textured pea protein, the vegetable protein texturizing experts SOTEXPRO and the starch manufacturer ROQUETTE are together opening up new innovation prospects for the meat and ready-made meals industry. The company underlines that marketed by SOTEXPRO under the brand name Texta pois 65/70, this innovative texturizing solution is obtained by extrusion-cooking process. They explain that after rehydration the textured pea protein has a fibrous aspect and a texture comparable with that of meat. This functional characteristic is valued in many prepared-meat applications and in ready-made and vegetarian meals, etc. This “meat extender” could be a partial substitute for meat in burgers, meatballs, chicken nuggets, etc. For example, as the company underlines, in a typical burger steak the rehydrated textured pea protein in combination with beef can represent up to 30 percent and more of the end product. Without any vegetable aftertaste, the pea protein guarantees the texture and juiciness of the finished product.

SUPERBATM KRILL OIL SUPPLEMENTATION: BENEFICIAL EFFECTS ON HEART FUNCTION
SuperbaTM Krill oil supplementation recently demonstrated beneficial effects on heart function in an experimental model of heart failure (study published in BMC Lipids in Health and Disease). Pre-treatment with krill oil attenuated left ventricular dilatation and hypertrophy after myocardial infarction. The study was performed by researchers at Oslo University Hospital, Norway, and included 53 male rats divided into three treatment groups: a control group, a group pre-treated with krill oil, and a group given SuperbaTM Krill oil only after induction of myocardial infarction. Researchers refer that animals pre-treated with krill oil showed significant attenuation of left ventricular dilatation, heart weight and lung weight, as compared to the placebo group. These effects were accompanied with reduced expression of genes involved in left ventricular stress, matrix remodelling and inflammation. Kjetil Berge, R&D Director of Aker BioMarine Antarctic explains: "The health benefits of krill oil have been previously revealed through numerous studies and clinical trials. Previous studies have shown that krill oil increases the level of EPA and DHA in heart tissue, but this is the first study to indicate beneficial effects on a hard end-point like myocardial infarction".

WEMA: WATER EFFICIENT MAIZE FOR AFRICA
Maize is the most important staple in Kenya that is consumed by 96 percent of the population while providing 40 percent of calorie requirements. Smallholder farmers produce an estimated 70 to 80 percent of maize in Kenya but climatic vagaries including drought have contributed to declining crop yield. Kenya is currently a net maize importer as production of the staple at farm level fail to match increased demand from a growing population. The Water Efficient Maize for Africa (WEMA) is a public-private partnership initiative formed in 2008 to explore novel ways of utilizing conventional advanced breeding and biotechnology to develop drought tolerant maize for smallholders in sub-Saharan Africa. James Gethi, coordinator of WEMA in Kenya, said: "The purpose of this project is to increase drought tolerance in hybrid seeds to significantly boost yield stability". Kenya is among five African countries including Uganda, Tanzania, Mozambique and South Africa where the project is being executed with funding from the Gates Foundation. The African Agricultural Technology Foundation (AATF) negotiated for the technology on behalf of African countries, while Monsanto and the International Maize and Wheat Improvement Centre (CIMMYT), are providing germplasm, and breeding biotechnology. The national agriculture research centres in the five countries are testing the efficacy of WEMA at confined field trials. Gethi revealed that confined field trials extend up to 2017 when the regulator confirms the viability of this technology for mass adoption. Moreover Gethi reiterated that success of WEMA project would replicate in other arid and semi-arid parts of the country where erratic rains have adversely impacted on maize production. Seed companies are keen on scaling up adoption of improved maize varieties among smallholders in sub-Saharan Africa.

FRUIT AND VEGETABLES CONSUMPTION: IS ENOUGH?
The WHO estimates that in more than half of the countries of the WHO European Region the consumption is lower than 400 g per day of fruit and vegetables, and in one third of the countries the average intake is less than 300 g per day. EFSA’s analysis based on national dietary surveys suggests that the recommended amount is reached only in 4 of the 16 participating EU Member States. Most of the benefit of consuming fruit and vegetables comes from a reduction in cardiovascular disease risk, but fruit and vegetables may also reduce the risk of certain cancers. WHO has estimated that insufficient intake of fruit and vegetables causes around 14 percent of gastrointestinal cancer deaths, about 11 percent of ischaemic heart disease deaths and about 9 percent of stroke deaths worldwide. In general, girls and women consume larger amounts of fruit and vegetables than do boys and men. This seems to be the case also for pre-school children. There is no simple answer to the question why females eat more fruit and vegetables than males. It has also been suggested that girls like fruit and vegetables more than do boys and hence they eat more of them. Why that is, however, remains unclear. Age also appears to influence fruit and vegetable consumption. In children and adolescents, consumption tends to decrease with age. In adults, the relation between age and intake is inversed, i.e. intake levels increase with age. Children’s fruit and vegetable intake levels are related to how much their parents consume. There is also a relationship between family rules and children’s vegetable intake. Pressure to eat fruit and vegetables does not have any positive effect on intake in children. However, consumption can be enhanced when parents are good role models and encourage children to eat fruit and vegetable. Increasing fruit and vegetable consumption is one of the goals identified in the European Commission's White Paper on Nutrition from 2007, which among other things addresses childhood obesity in Europe. In the concluding remarks of the White Paper, it is stated that a "School Fruit Scheme would be a step in the right direction". This has become reality and an EU-wide scheme to provide fruit and vegetables to schoolchildren started in the school year 2009/2010. There are already national initiatives in place aiming at increasing fruit and vegetable consumption in children.
