Food scientists whether from the Industry, Universities, Governmental Agencies, work to monitor food composition (chemical andphysical properties) and to ensure the quality and safety of food. Consumers’ increase in knowledge concerning the relationshipbetween diet and health is a challenge for the food industry. Consumers in fact demand a wide variety of products that are ofhigh quality, rich in nutrients and safe. Analytical methods therefore need to be applied along the entire supply chain to achievethis goal.
