Caseinates: nutrition, functional benefits and differentiation
Acid caseins and caseinates – the main proteins in milk, accounting for 80 per cent of its protein content – are at the heart of EPI INGREDIENTS’ expertise.
EPI INGREDIENTS presents a range of caseinates obtained through an indirect acidification process, with no additives added to the milk, followed by an extrusion step – a technology still rarely used by most suppliers. This range offers the following features:
- High protein content (min. 95 per cent dry matter)
- Low lactose content
The range includes:
- Acid casein: used in particular in coffee creamers for its whitening properties
- Sodium caseinate: with emulsifying and thickening properties
- Calcium caseinate: providing good jellifying and foaming basis
