Abstract

Egg lipids, especially the phospholipids from egg, contain a number of nutrient substances that are important forinfant nutrition products: long chain polyunsaturated fatty acids and choline. Commercial egg lipids products can offer flexible fatty acid composition because of the inclusion of application specific triglycerides, a small cholesterol content alsohelps to mimic human milk composition.
