Proteins obtained from dairy products are in increasing demand due to emerging applications in nutrition, pharmaceutical and cosmetic applications. Proteins such as lactoferrin and lactoperoxidase can be obtained from either skimmed milk or whey derivatives, which are a by-product of cheese manufacture.

 

Lactoferrin is a protein that can serve several useful biological functions. It has antimicrobial, antiviral, anti-inflammatory, anti-fungal, anti-cancer and antioxidant properties, as well as uses as a nutritional supplement. For this reason, lactoferrin has found uses in baby formula, as well as treatments for cystic fibrosis, Alzheimer’s disease and Immunomodulation. Lately, lactoferrin has also been established to have in-vitro antiviral efficacy against a wide range of viruses, including SARS-CoV-2 (Covid-19).
