Abstract

EPA and DHA have been shown to be associated with several beneficial health effects including improved cardiovascular function, development and performance of the brain as well as reduction in inflammation. Industry hasdeveloped physical, chemical and enzymatic production methods in order purify these compounds. This article presents anovel enzymatic production method for concentrating EPA/DHA using a packed bed reactor system.
