Abstract

In this issue, we present a Panel Discussion on Personalised nutrition and free-from. Experts from food ingredients companies and consultants have been invited to participate around a virtual table and discuss about innovation driven by free-from foods, advances in big data analytics, artificial intelligence, machine learning, how to approach personalised nutrition, the bottlenecks that are stopping some companies from progressing in personalised nutrition and the role of gut microbiome.

The idea of personalized nutrition has been around for some time. It has some obvious challenges, like market size (only one individual) and how to get data on which to base the personalization. However, where there are challenges, there are opportunities and technologies develop.
